[FieldTrip] how to make standard-score tranformations with the data format usually used in Fieldtrip

Dear all,

I have made good experiences in the past with applying standard-score
transformation to EEG data, especially when one expects a strong difference
between subjects in how the magnitude of the signal turns out in the
recording.

But in standard MATLAB operations this is simply: zscore(data)

That does not fly with the usual cnt formats that use a structured
representation of the data, how do you (if you happen to have done so in
the past) apply this step?
