I am writing in order to set up filedtriptoolbox in my Big Sur Mac M1 chip.  I try

sudo xattr -r -d com.apple.quarantine ./Downloads/fieldtrip-20201123

sudo find ./Downloads/fieldtrip-20201123/ -name \*.mexmaci64 -exec spctl --add {} \;

And
