[FieldTrip] Understanding how topoplots work

Dear all,
I have difficulty finding the documentation on how the topoplots actually work. I know that the parameter that is being plotted should be two dimensional data. for instance power spectrum it is channels by frequencies and the values corresponds to the power of each channel in that frequency. But, In order to plot the topoplot for each channel only one value is needed. I want to know which of the value of the channel (which element of the row) is chosen ?
