You might have a look to the following FAQ:

I'm not sure about the state of the art of the eeglab2fieldtrip.m function
but it might help you out as well. To know more about the fieldtrip data
type field structures you need to have to work in Fieldtrip, the
ft_datatype* functions will be important for you, i.e.:

ft_datatype_freq
ft_datatype_raw
ft_datatype_sens
ft_datatype_timelock
