You can specify xparam/yparam and zparam in the singleplotTFR  
configuration. Assuming that you have something like

freq = freqanalysis(...)

cfg.cohmethod = 'plv'
fd = freqdescriptives(cfg, freq)

then your fd structure contains
   fd.time
   fd.freq
   fd.plvspctrm
which are to be specified as x, y and z params for singleplotTFR.
